- Prepare 1 cup Italian breadcrumbs

- Get 2 cups shredded cheese (mozerella or pizza blend)
Place bread crumbs and cheese in another shallow bowl. Stir the oil and herbs in a small bowl to blend. Brush both sides of the cutlets with the herb oil. Pound the chicken thin: Place the chicken cutlets one at a time between two layers of plastic wrap or wax paper.
